Leafy greens
Leafy greens are, as the name suggests, the vegetables whose leaves we eat. These include lettuce, which is in the aster family, arugula , which is in the cruciferous family (along with cabbage), and spinach and chard, which are related to beets. Leafy greens are typically summer foods, but can be frozen or fermented to preserve for the winter. Some of them are wind-pollinated, others require insects to set seeds.
