Emmer

Emmer or two-corn is a link in the evolutionary line before spelt. Spelt is believed to be a cross between emmer and a grass species called shepherd's purse (Aegilops speltoides).

Emmer has a softer gluten than spelt. The grain also has a stronger, more nutty flavor compared to spelt. Archaeological findings show that Emmer was very popular in the Middle East as early as 6000 – 9000 BC. Mixing spelt and emmer produces a dough with good baking properties and a bread with a nutty aroma.
