Herb butter
Herb butter is simple and great for bread, hot vegetables, meat and fish. Vary it with different herbs and flavors!
Equipment and procedure
For eight servings you will need:
• 100g butter
• 2 tablespoons fresh herbs, or 1 teaspoon dried
• 1 tablespoon lemon juice
• 1/2 teaspoon salt
• 1/4 tsp pepper
Leave the butter out so it is room temperature and soft to work with. Finely chop the herbs. Mix all the ingredients together well.
Form a sausage out of the butter on wax paper. Roll the butter into the paper and let it harden in the refrigerator. Before serving, cut the butter into slices.
The herb butter can also be frozen, which will extend its shelf life a little.
