Birch sap
Birch sap is the taste of spring!
Recipe and method
You need:
- 500 grams of newly sprouted birch leaves (mouse ears)
- 1 kg sugar
- 1 sachet of citric acid (25 g)
- 1.2 liters of boiling water
- Kettle with lid
- Strainer/colander
- Bottles to hold the juice
Place the leaves in a saucepan with sugar and citric acid. Pour over boiling water. Cover and leave to steep for 3-4 days. Then strain the leaves and bottle the juice.
NOTE: The juice has a short shelf life and must be drunk quickly or frozen.
