Birch sap

Birch sap is the taste of spring!

Recipe and method

You need:

  • 500 grams of newly sprouted birch leaves (mouse ears)
  • 1 kg sugar
  • 1 sachet of citric acid (25 g)
  • 1.2 liters of boiling water

 

  • Kettle with lid
  • Strainer/colander
  • Bottles to hold the juice

Place the leaves in a saucepan with sugar and citric acid. Pour over boiling water. Cover and leave to steep for 3-4 days. Then strain the leaves and bottle the juice.

NOTE: The juice has a short shelf life and must be drunk quickly or frozen.
