Country wheat is wheat that has been selected and refined in the field by farmers over thousands of years.

Country wheat varieties are wheat varieties that have never been manipulated in a laboratory to produce the characteristics sought by industrial bakers. They have a natural protein composition that makes them more similar to spelt than modern wheat.
